Mofongo


Mofongo is basically mashed plantains with seasonings. You can also add things like seafood, meat, and vegetables to make the dish even better. It can be a side dish or main dish served typically with beans and rice.

Arroz Con Gandules


Arros con gandules is rice with pigeon peas. This dish has Caribbean roots but the island twist is a sauce added called sofrito. It is typically made with ham, pork, chorizo, red peppers, and olives. You can thank the Spanish roots on the island for these ingredients.

Tostones



Tostones is simply plantains sliced and fried into a patty shape. They are crunchy on the outside and meaty on the inside. If you wait until the plantains are really ripe you won't get as crunchy of an exterior but the meat is sweet.

Sofrito


Sofrito is not a dish but a sauce. It is made from a mixture of spices and herbs, especially recao (culantro) and aji dulce (sweet pepper). It can be found in dishes like soups, stews, pork, and vegetables. It adds an extra kick to Puerto Rico's food. Some people who make large batches freeze the sauce into ice cubes or containers. This way the sauce will last for longer periods of time.

Pasteles


Pasteles are dough filled with meats and/or veggies. the dough can be made out of yuca, or cassave, or can be made from a mixture of green banana, green plantain, taro and pumpkins. The filling is just meats and veggies mixed together and put into the dough. This is then wrapped in either a banana leaf or corn husk and cooked. Since this dish is very labor intensive, many people choose to make it for special occasion, especially Christmas.
